Brew and milk temperatures

Brew water is usually between 90 and 96 °C, depending on the blend.

Milk is steamed to about 60-65 °C. Above 70 °C the milk scalds and loses its sweetness.

Brew water is usually between 90 and 96 °C, depending on the blend. Too low and the coffee tastes sour and weak. Too high and it tastes bitter.

Milk and steam wand

  • Steam to about 60-65 °C.
  • Above 70 °C the milk scalds and loses its sweetness.
  • Clean the steam wand straight after every use.

Practical points

  • The temperature in the cup also depends on how warm the groups and cups are, not only on the machine setting.
  • Let the machine settle before you judge the taste.
  • If you serve fast, pre-warm the cups.

Change one thing at a time

If you change the temperature, change only that and test with the same blend and the same dose. Write down the result so you know what worked.

If the temperature will not hold

If coffee comes out lukewarm or the machine does not heat water, see machine does not heat water and machine has no steam, or request service.
